Recipes – Black eyed pea salad

Black-Eyed Pea salad
1 bag of black-eyed peas
¼ Cup Lime juice
A smidge of olive oil
½ Cup Rice Wine Vinegar
1 purple onion chopped
1 each red, yellow, green, orange pepper diced
1 bundle Italian parsley
Soak the black-eyed peas in cold water overnight with ¼ teaspoon baking soda. Drain, rinse let sit until ready to make the salad
Chop the onion, parsley and peppers add to mixing bowl along with the olive oil, lime juice, and Rice wine vinegar
Bring black-eyed peas to a low boil till beans are tender, approx 10 mins. There will be a lot of “bean foam” so it’s best to boil in a large pot.
Drain and rinse beans once tender add to the rest of the salad ingredients, gentle mix, add more rice wine and lime juice to taste. Salt/Pepper enjoy
